Here’s what you’ll need for this banana oatmeal bake cake

Banana Oatmeal Bake Cake
Equipment
- 1 food processor optional
Ingredients
- 4 ripe bananas the more spots, the sweeter
- 1 stick butter softened
- ½ cup white sugar
- 1 cup brown sugar
- 2 cups oat flour
- 1 tsp baking soda
- 1 cup Greek yogurt
- 2 eggs
- 1 tsp vanilla
- 1 tsp cinnamon
- ¾ tsp salt
Optional extras: chocolate chips, walnuts, pecans, or your favorite berries
Instructions
- Preheat your oven to 375°F
- Grind oatmeal into you have a powder (some larger chunks are okay)
- Mix together the ground oats, cinnamon, baking soda, and salt and set aside
- Mash those bananas and softened butter until smooth and then add the sugar and whisk until mostly dissolved
- Add the eggs, Greek yogurt and vanilla whisk everything until combined
- Stir in your dry ingredients until everything is well combined. If you’re feeling fancy, this is when you would fold in some chocolate chips, nuts, or your favorite berries.
- Pour the mixture into a greased 9X13 baking dish
- Bake for about 25-35 minutes, or until the edges are golden and the center is set.

Slice it up hot from the oven, you can add an optional drizzle of honey, or once cooled top with our Brown Butter Cinnamon Cream Cheese Frosting for extra indulgence! (Be sure to refrigerate if using frosting.)
Brown Butter Cinnamon Cream Cheese Frosting
Ingredients
- 1 stick butter
- 1 8oz brick cream cheese
- ½ tsp cinnamon
- ¾ cup powdered sugar
Instructions
- Take your cream cheese out of the fridge to soften
- Start melting your butter in a pan on the stove. Once melted, start stirring it over medium heat every couple of seconds. You will see a white foam coming from the top of the butter, that’s your water boiling off. The butter will turn quiet and start to develop brown bits on the bottom of the pan, when that happens your butter is done!
- Add cinnamon to the hot brown butter and transfer the finished butter into a mixing bowl and let cool for about 10 minutes
- Once cooled, add your slightly cool brick of cream cheese and get your hand mixer and start beating the fats together. (it will look broken for a few minutes, but trust the process and keep beating, it will come together)
- Once beaten and airy, add your salt, vanilla, and powdered sugar, and beat until fluffy
